The original recipe called for a cup of mixed nuts but I substituted Cheerios since I had those in my box and, even though nobody in his class has an allergy, I know there is a lot of sensitivity around nuts in school. I also added a bag of those candy pumpkins that you can find this time of year on the Halloween aisle. I doubled the recipe and had PLENTY for 28 treat bags (we had to keep a few at home for the baby since he was my sous chef)!
Baked Cereal Honey Snack Mix
3c Wheat Chex cereal (I used rice since I had those.)
3c checkerboard shaped pretzels
2c popped popcorn
1c sesame sticks (I found these with the nuts, candies and dried fruits in the produce section of my Publix.)
1c mixed nuts (I substituted Cheerios.)
1/4c honey
3T canola oil
1 bag candy pumpkins
1. Heat oven to 275. Mix cereal, pretzels, popcorn, sesame sticks and nuts in ungreased jelly roll pan, 15x10x1.
2. Mix remaining ingredients in small bowl. Pour over cereal mixture, stirring until evenly coated.
3. Bake 45 minutes, stirring occasionally. Spread on waxed paper; cool about 30 minutes. Store in tightly covered container up to 1 week.
The littles gobbled up a healthy portion of the leftovers after school and I think it’s a perfect, not tooooo sugary snack!
